Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

36-32-5    Basic - Ceiling/ceiling tile shows damage or is in disrepair. Ceiling tile hanging in back kitchen area creating a hole to area above drop ceiling.
16-29-4    Basic - Clean in place equipment not washed, rinsed and sanitized using three distinct steps. Ladle picked up off the floor was placed back with clean equipment and not washed, rinsed or sanitized.
14-38-4    Basic - Food storage container/container lid cracked or broken. Container lids to flour and poppyseed cracked.
36-24-5    Basic - Hole in or other damage to wall. Hole in wall by top step going to storage area **Warning**

12A-13-4    High Priority - Employee handled soiled equipment or utensils and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Employee not wearing gloves picked up a ladle off the floor and put ladle with clean equipment then went in the back kitchen and brought a partially cooked quiche, without removing gloves, washing hands and putting on clean gloves. Discussed with Manager.
