A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance.
Vent above walk in cooler with dust accumulated.
Also, standing water observed at the main ice cream reach in freezer.
Floor soiled in walk in cooler.
Floors at front counter area around ice cream reach in freezer with food decries buildup.
Basic - Interior of refrigerator or freezer in disrepair/has exposed insulation.
Exposed insulation observed on interior of walk in freezer door. **Repeat Violation**
Basic - Label on a food item prepared and packaged onsite for customer self-service does not include product identity/description, date product was packaged and name and address of the establishment that prepared and packaged the food.
Several frozen ice cream products for customer self service packaged on site missing minimum labeling. **Repeat Violation**
Basic - Old labels stuck to food containers after cleaning.
Observed old label residue on several clean dishware items stored above triple sink area. **Repeat Violation**
Basic - Water leaking from pipe and/or faucet/handle.
Observed leak at piping to main dipperwell dripping onto ground. Person in charge added catch bucket. **Corrective Action Taken**
High Priority - Vacuum breaker missing at mop sink faucet or on fitting/splitter added to mop sink faucet.
Vacuum breaker missing at both sides of splitter at mop sink.
