Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

35A-03-4    Basic - Dead roaches on premises. Observed one dead roach on floor in back kitchen area. Discussed with person in charge, swept up dead roach. **Corrective Action Taken**
14-11-5    Basic - Equipment in poor repair. Observed gaskets on flip-top cooler at front counter torn.
08B-38-4    Basic - Food stored on floor. Observed cold brew coffee on floor at front counter. Person in charge moved coffee off floor. Observed plastic bottles of water on floor in back kitchen area. **Corrective Action Taken**
21-07-4    Basic - Wiping cloth chlorine sanitizing solution not at proper minimum strength. Observed wiping cloth sanitizer at 0ppm chlorine, person in charge added more bleach and retested at 75ppm. **Corrected On-Site**
22-42-4    High Priority - Chlorine sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. Observed triple sink sanitizer at 0ppm chlorine. Person in charge added more bleach and retested at 100ppm chlorine. **Corrected On-Site**
01B-13-4    High Priority - Stop Sale issued due to food not being in a wholesome, sound condition. Observed drink ice at front counter with coffee spilled in. Person in charge removed contaminated ice.
03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed butter (78F - Cold Holding) EFT on counter for approximately three hours per person in charge. Discussed time control and provided paper work to person in charge.
08B-15-4    Intermediate - Whole fruit displayed for self-service not wrapped and no utensils provided. Observed apples on display not wrapped next too front counter entrance. Discussed with person in charge.
