A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Old labels stuck to food containers after cleaning.
Observed old labels/ old label residue on several clean dishware items. Person in charge pulled to clean. **Corrective Action Taken** **Repeat Violation**
High Priority - Stop Sale issued due to food not being in a wholesome, sound condition.
One package of opened cream cheese with visible mold like substance growth in walk in cooler.
Also, one container of quiche in walk in cooler dated 12/29 in walk in cooler.
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit.
In sandwich make line cheese above fill line at 50F. Person in charge removed excess and moved to drawers below holding temperature. **Corrective Action Taken** **Repeat Violation** **Admin Complaint**
High Priority - Toxic substance/chemical improperly stored.
Observed spray paint stored on shelf with coffee syrups in dry storage area by back door.
Also, observed employee medicine stored on shelf above clean glassware in dishpit. Person in charge moved both items to appropriate location. **Corrected On-Site**

Person in charge has been manager for longer than 30 days, only able to provide proof of food handler training.
Intermediate - No paper towels or mechanical hand drying device provided at handwash sink.
Paper towels missing from hand wash sink at coffee bar. Also, soap dispenser at coffee bar not functioning. Person in charge provided paper towels and pump soap. **Corrective Action Taken**

Spray bottle with purple chemical person in charge identified as fabuloso unlabled in dishpit area. Person in charge labeled appropriately. **Corrected On-Site**
