A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Label on a food item prepared and packaged onsite for customer self-service does not include product identity/description, date product was packaged and name and address of the establishment that prepared and packaged the food.
Missing address, date packed, item from self service cheese cut and packaged on site for customer self service.
Basic - Standing water or very slow draining water in handwash sink, three-compartment sink, or mop sink.
Hand wash sink at front counter slow draining.
High Priority - Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature.
Raw chicken stored over raw pork in walk in cooler. Person in charge moved to correct area. **Corrected On-Site**
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit.
Cream in squeeze bottle at cook line at 64F. Person in charge states has been out of unit less than 4 hours. Cheese in makeline stored above fill line at 45F. Person in charge removed excess to unit below. Will hold on ice, added to ice during inspection. **Corrective Action Taken**
High Priority - Vacuum breaker missing at mop sink faucet or on fitting/splitter added to mop sink faucet.
Vacuum breaker missing at mop sink faucet and at non chemical side of splitter. **Repeat Violation** **Admin Complaint**
Intermediate - Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked.
Pork made more than 24 hours ago per person in charge with no date mark. Also, cooked product in reach in freezer with no date mark.
