Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

36-34-5    Basic - Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance. Ceiling vent in back area near dishmachine and by ice machine with debris buildup.
42-01-4    Basic - Wet mop not stored in a manner to allow the mop to dry. Wet mop heads stored in mop sink, not hung to dry.
21-45-1    Basic - Wiping cloth sanitizing solution other than chlorine, quaternary ammonia or iodine, not at proper minimum strength, not used according to label instructions. Sanitizer bucket with sink and surface below registering range on strip. Person in charge will call for service and hand mix until repaired. **Corrective Action Taken**
03B-01-6    High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Rice in warmer at 124-130F per person in charge cooked approximately 1 hour ago. Placed on time control during inspection. Queso on line at 126F. Person in charge reheated to above 165F. **Corrective Action Taken**
41-17-4    Intermediate - Spray bottle containing toxic substance not labeled. Spray bottle with blue chemical unlabeled at back chemical storage area. Person in charge discarded. States is multi surface cleaner. **Corrective Action Taken**
