The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.

Observed top panel of microwave oven has old food dried on the surface.
Basic - No conspicuously located ambient air temperature thermometer in holding unit.
Observed thermometer not working properly in the displayed cooler.(made market) **Corrected On-Site**
Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust.
Observed old food debris spilled on the counter near the cutting board in the prep kitchen.
Basic - Opened employee beverage container in a cold holding unit with food to be served to customers.
Observed open bottle of water stored with strawberry container inside reach in cooler.
High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly.
Checked dishmachine twice sanitizing not dispensing properly 0 ppm chlorine, recommend Manager to notify dishmachine company.
Found out employee changed sanitizer container did not prime the dishmachine rechecked @10am 50ppm.
Recommend training for all dishwasher.

Observed one flying insects in the dry storage room near the glass jars o the shelves.
Notify supervisor on duty next unannounced inspection.
High Priority - Raw animal food stored over/not properly separated from ready-to-eat food.
Observed thaw chicken breast stored over ready to eat liquid eggs stored inside walk in cooler. **Corrected On-Site**
Intermediate - Commercially processed ready-to-eat, time/temperature control for safety food opened and held more than 24 hours not properly date marked after opening.
Observed heavy cream stored inside reach in cooler over 24 hours not date marked, located on cook line. **Corrected On-Site**
