A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Floor soiled/has accumulation of debris.
Floor of walk in cooler with debris, old food accumulated especially in corners of unit.
Observed holes in ceiling tiles where piping from the walls meet ceiling in back kitchen in several places. **Repeat Violation**

Handle touching raw beef at makeline. Person in charge removed. **Corrected On-Site**
Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust.
Cabinets under soda machine and hand wash sink at front line with debris accumulation.
Right side of fryers with grease accumulation. **Repeat Violation**
Basic - Time/temperature control for safety food thawed in an improper manner.
Philly meat thawing on counter at room temperature in kitchen. Person in charge moved to walk in cooler. **Corrected On-Site**
Basic - Wiping cloth quaternary ammonium compound sanitizing solution not at proper minimum strength.
Sanitizer bucket a 0ppm. Also stored on back of make line cooler. Person in charge remade to 200ppm. **Corrective Action Taken**
High Priority - Cooked/heated time/temperature control for safety food not cooled from 135 degrees Fahrenheit to 41 degrees Fahrenheit within 6 hours.
Bone in and boneless wings in walk in cooler cooling overnight per person in charge with no preparation done today at 52-53F. Observed items in covered containers with condensation on the lid.
High Priority - Stop Sale issued on time/temperature control for safety food due to temperature abuse.
