Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

12B-12-5    Basic - Employee drinking from an unenclosed beverage container in a food preparation/clean dishware area and the container does not have a dispensing mechanism to prevent hand contact with lip contact area of drink container. **Warning**
10-07-4    Basic - In-use utensil stored in standing water less than 135 degrees Fahrenheit. Observed dirty utensils in water with a temperature of 87°F. The cook poured out the water. **Corrective Action Taken** **Warning**
21-04-4    Basic - In-use wet wiping cloth/towel used under cutting board. **Warning**
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed the walk in cooler fan guard soiled. **Warning**
14-17-4    Basic - Walk-in cooler shelves with rust that has pitted the surface. **Warning**
21-12-4    Basic - Wet wiping cloth not stored in sanitizing solution between uses. **Warning**
08B-02-4    High Priority - Displayed food not properly protected from contamination. Observed several different cut fruits for drinks on the bar top not covered. **Warning**
12A-07-5    High Priority - Employee failed to wash hands before putting on gloves to initiate a task working with food. Observed the bartender cutting a lime with no gloves on I stop him and told he needs to use gloves. He put on the gloves without washing his hands. **Warning**
12A-10-4    High Priority - Employee touched bare body part and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Observed the bartender touched his face and continued to make touch cups. **Warning**
08A-04-5    High Priority - Raw animal food stored over or with unwashed produce. Observed raw beef patties over plantains in the up right refrigerator next to the walk in cooler. The cook moved the beef patties to the bottom shelf. **Warning**
08A-20-5    High Priority - Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. Observed raw chicken over beef in the walk in cooler. The cook moved the chicken. **Corrected On-Site** **Warning**

31A-09-4    Intermediate - Handwash sink not accessible for employee use at all times. Observed a strainer on top of the hand washing sink at the warehouse washing area. The dishwasher removed it. **Corrected On-Site** **Warning**
