Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. In general, critical violations are those that, if not corrected, are more likely to contribute directly to food contamination, illness or environmental damage. Although we use the industry-standard term "critical", varying degrees of severity and potential risk to the public require inspectors to assess each situation in determining the appropriate action. In addition, while an establishment may have multiple violations, the inspectors' training and judgment formulate the overall result of the inspection to ensure the public health and safety. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

Ambient air is staying cold but when unit is opened, ambient air in kitchen is so warm that it is quickly draining cold air from cooling unit. Corrected On Site by moving foods to a refrigerator unit. Foods to be used within 7 day cycle as refrigerated foods since thawed.

[Cooked pasta, cooked rice, cooked potatoes, some dated 6/24, in cookline reachin cooler (silver low unit at white microwave.), between 46 and 48degF] Corrected On Site by discarding items cooked before today. Today's lunch items moved to walk in cooler.
35A-05-1    Critical - Observed roach activity as evidenced by 2 live roaches found on floor by dish machine. Corrected On Site by operator immediately killing and cleaning up one in center floor area at machine. Second live toach crawling on/around sanitizer bucket below dish machine.
14-37-1    Observed several (3+) cutting boards in kitchen grooved/pitted and no longer cleanable. Dark grooves are heavy. Large black stains on several boards. Repeat Violation.
15-31-1    Observed walk in cooler door curtain in disrepair. Panels are torn/missing.
