Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. In general, critical violations are those that, if not corrected, are more likely to contribute directly to food contamination, illness or environmental damage. Although we use the industry-standard term "critical", varying degrees of severity and potential risk to the public require inspectors to assess each situation in determining the appropriate action. In addition, while an establishment may have multiple violations, the inspectors' training and judgment formulate the overall result of the inspection to ensure the public health and safety. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

04-01-1    Critical - Cold holding equipment incapable of maintaining potentially hazardous food at proper temperatures- walkin cooler holding at 44F and fan is moderately iced up. This violation must be corrected by : 12/28/11.
03D-06-1    Critical - Cooked potentially hazardous food not cooled from 135 degrees Fahrenheit to 70 degrees Fahrenheit within 2 hours- breakfast items placed in walkin in large buckets tightly covered at 67F after three and a half hours. Corrected On Site.
29-08-1    Faucet on waitstation handsink extremely loose.
14-41-1    Food-contact surface not smooth and easily cleanable- cracked storage containers in walkin and ice scoop in waitstation.
14-50-1    Observed a nonfood-grade basting brush used in food.
23-06-1    Observed build-up of food debris, dust or dirt on storage container lids in kitchen and dry storage.
23-06-1    Observed build-up of food debris, dust or dirt on table legs and underneath surfaces in kitchen.
23-03-1    Observed build-up of grease inside exhaust system hood.
23-03-1    Observed build-up of grease on shelf adjacent to stove.
36-13-1    Observed grease moderately accumulated under cooking equipment.
29-11-1    Observed leaking pipe underneath cookline handsink.
03A-07-1    Critical - Observed potentially hazardous food cold held at greater than 41 degrees Fahrenheit- meats and cooked vegetables in walkin cooler at 44F. This violation must be corrected by : 12/28/11.

22-27-1    Critical - Observed sugar scoop encrusted with soil deposits.
01B-15-1    Critical - Stop Sale issued due to adulteration of food product- box of mousse mix with several rodent droppings and chewed bags.
