Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. In general, critical violations are those that, if not corrected, are more likely to contribute directly to food contamination, illness or environmental damage. Although we use the industry-standard term "critical", varying degrees of severity and potential risk to the public require inspectors to assess each situation in determining the appropriate action. In addition, while an establishment may have multiple violations, the inspectors' training and judgment formulate the overall result of the inspection to ensure the public health and safety. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

04-01-1    Critical - Cold holding equipment incapable of maintaining potentially hazardous food at proper temperatures......reach in cooler, cooke line. Must not have stored any potentially hazardous food until maintain at proper temperature of 41 degrees or below. Repeat Violation.
46-07-2    Critical - Exit signs missing. For reporting purposes only.....back door.
17-07-1    Critical - No chemical test kit provided when using chemical sanitizer at three-compartment sink/warewashing machine.....wrong test kit.
51-18-1    No copy of latest inspection report.
53A-09-1    Critical - No currently certified food service manager on duty with four or more employees engaged in food preparation.
22-26-1    Critical - Observed rusted racks in the reach-in cooler, cooke line.
23-03-1    Observed build-up of grease on nonfood-contact surface.....floor in bar by margarita machine , beer cooler and throuhout bar.
36-22-1    Observed floor area(s) covered with stagnet standing water......underneeth preperation table.
14-36-1    Observed gaskets/seals on cold holding unit in poor repair.....torn gaskit , reach in cooler , cooke line.
22-28-1    Critical - Observed interior of reach-in cooler soiled with accumulation of food residue and standing water. cooke line.
35A-08-1    Critical - Observed live flies in kitchen....cuples flies in kitchen .
03A-07-1    Critical - Observed potentially hazardous food cold held at greater than 41 degrees Fahrenheit......chorizo , cooked spinach , chicken , beef, 48 degrees in reach in cooler ,kitchen . food being held less than 4 hours. food moved to freezer . Corrected On Site. Repeat Violation.
08A-26-1    Critical - Observed raw animal food stored over ready-to-eat food.....raw fish above ready to eat chorizo , cheese in reach in cooler , cooke line. Corrected On Site.
25-06-1    Observed single-service articles stored without protection from contamination.....to go container in kitcken . Corrected On Site.
37-03-1    Observed wall in disrepair....by the exit door. Repeat Violation.
37-12-1    shelving not smooth and easily cleanable....rusted shelves in walk in cooler .
