Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. In general, critical violations are those that, if not corrected, are more likely to contribute directly to food contamination, illness or environmental damage. Although we use the industry-standard term "critical", varying degrees of severity and potential risk to the public require inspectors to assess each situation in determining the appropriate action. In addition, while an establishment may have multiple violations, the inspectors' training and judgment formulate the overall result of the inspection to ensure the public health and safety. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

03D-05-1    Critical - Cooked potentially hazardous food not cooled from 135 degrees Fahrenheit to 41 degrees Fahrenheit within 6 hours. Observed cooked chicken in the walk-in cooler at 53 degrees fahrenheit. Product was cooked yesterday and placed in the walk-in cooler around 11:00pm in a covered plastic container. See stop sale notice.
20A-10-1    Critical - Dishmachine chlorine sanitizer not at proper minimum strength. Measured 0 PPM. Set-up 3-compartment sink to wash, rinse, and sanitize dishes and utensils.
36-11-1    Floors not maintained smooth and durable in dishwashing area by whit chest freezer.
32-16-1    Critical - Hand wash sink lacking proper hand drying provisions. Corrected On Site.
05-09-1    Critical - No conspicuously located thermometer in holding unit - glass door cooler in dishwashing area.
53B-08-1    Critical - No proof of required employee training provided. To order approved program food safety material, call DBPR's contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. Observed all employee training has expired. Repeat Violation.
35A-03-1    Critical - Observed dead roaches on premises - baking room.
37-13-1    Observed hole in ceiling in dishwashing room.
41B-03-1    Critical - Observed unlabeled spray bottle. Degreaser in spray bottle not labeled. Corrected On Site.
01B-16-1    Critical - Stop Sale issued on potentially hazardous food due to temperature abuse (see Stop Sale Notice).
