A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Clean utensils or equipment stored in dirty drawer or rack at prep area near chili cook area. Clean utensils also in soiled bins on loewr shelves of equipment storage near dish wash machine.
Basic - Soil residue build-up in hand wash sink cabinet at front counter, on shake machine unit base, on fudge dispenser spout, on exterior of dairy dispenser at shake machine.
High Priority - Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Quaternary ammonium in wiping cloth bucket at 500ppm. **Corrected On-Site**
Intermediate - Accumulation of food debris on ice cream topping containers and container storage system. Also, at shake station, 16 tall metal cups, each partially holding shake mix are only chilled at lower portion. Shake machine station is left heavily soiled from 3rd shift.
Intermediate - Food-contact surfaces encrusted with grease and/or soil deposits. (Electric hand blender base and cord stored soiled with greasy red-orange residue in drawer with clean utensils.)
Intermediate - Interior of reach-in cooler soiled with accumulation of food residue. (Cook line coolers and cooler drawers. Interior of shake station cooler has a deep puddle of milky water along entire interior where spray cans of whipped cream are stored.)
Intermediate - Water filter not changed according to manufacturer's instructions. (Dates of when filters last changed are not recorded on filter canister.)
