A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Dead roaches on premises. (2 dead roaches under prep table next to fryer. 4 dead on floor by water heater. 3 dead on top of water heater.2 dead on floor and 2 dead on opening at back of chest freezer. 1 dead on underside of make table cutting board across from cook line. 10 dead on floor behind make table across from grill. 10 dead on floor up against wall under paper bag rack.) **Warning**
Basic - Hole in wall above cove molding by prep table next to fryer. Holes in wall above large single bay sink in back of kitchen. Holes in wall above pizza dough prep table. **Warning**
Basic - Large amount of unused equipment/supplies present in kitchen. (Table saw, mixer, both by water heater. Boxes and equipment on upright freezer by water heater. Plates and mixing bowl in box on top of water heater.) **Warning**
High Priority - Roach activity present as evidenced by live roaches found. (Approximately 19 live roaches on unused cast iron pans stored in oven at cook line below in-use stove top. One live roach inside can opener table mount at table where dough prep is taking place. One live on floor near water heater. One live on floor behind chest freezer. One live above 3 compartment. 1 live in prep table at coffee pot station. 1 live on counter near dining room.) **Warning**
