Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

36-72-4    Basic - Walk-in cooler/walk-in freezer floor soiled. Walk in cooler and walk in freezer.
42-01-4    Basic - Wet mop not stored in a manner to allow the mop to dry. 2 mop heads wet in bottom of mop sink.
12A-06-4    High Priority - Employee failed to wash hands before putting on new set of gloves to work with food. Cooks line in kitchen.
22-40-4    High Priority - Quaternary ammonium sanitizer in bucket not at proper minimum strength. 100 ppm.
08A-07-4    High Priority - Raw animal food not properly separated from ready-to-eat food. Frozen turnips on meatloaf in walk in cooler.
02C-03-4    Intermediate - Commercially processed ready-to-eat, potentially hazardous (time/temperature control for safety) food opened and held more than 24 hours not properly date marked after opening. Buttermilk and ricotta cheese.
31B-02-4    Intermediate - No paper towels or mechanical hand drying device provided at handwash sink. Center buffet line. **Corrected On-Site**
