A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Working container of food not labeled in English. Observed no English labels on containers of soy sauce, peanut sauce, garlic and oil and chicken stock. In food preparation area and inside walk in cooler number four. All containers labeled in Chinese only. **Warning**
High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Observed fresh garlic in oil at 46 F,raw chicken at 45 F and butter at 44 F in walk in cooler number four overnight. Operator discarded the fresh garlic in oil, the raw chicken and the butter. **Corrected On-Site** **Warning**
Intermediate - Walk-in cooler not maintaining potentially hazardous (time/temperature control for safety) food at proper temperatures. Do not store potentially hazardous (time/temperature control for safety) food in this unit until the unit is capable of maintaining foods at 41 degrees Fahrenheit or colder. At walk in cooler number four, cooler ambient temperature is 52 F. Operator removed all TCS food from walk in cooler number four. **Warning**
