A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Ceiling/ceiling tile shows damage or is in disrepair.
Observed in the small dry storage closet in the kitchen, the ceiling tiles are loose and in disrepair.
Basic - Compartment of equipment subject to the accumulation of moisture is not sloped to drain to allow complete drainage.
Observed the ceiling having dripping water come from above. Staff states the air conditioner drain pipe is clogged. Water is dripping into a mop bucket, which should be emptied regularly to avoid condensation drip from splashing on anything nearby.
Basic - Standing water or very slow draining water in handwash sink, three-compartment sink, soda drain, or mop sink.
Observed the soda machine drain with standing liquid.
High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit.
Observed shredded cheese in the wait station reach in cooler, 58°. The cheese was moved to a working cooler. **Corrective Action Taken**
Intermediate - Reach-in cooler not maintained in good repair. Do not store potentially hazardous (time/temperature control for safety) food in this unit until the unit is repaired.
Ons the wait station reach in cooler with items at 51-58°. The time/temperature controlled for safety item was removed.
