A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Accumulation of debris on exterior of warewashing machine. **Warning** (Upon callback top of machine is clean except for some rust at the back pipe. Lower areas where doors meet counter level are soiled. Pipes and components below continue to have buildup.)
Basic - Floor soiled under shake cooler with debris. **Warning**. (Upon callback, area remains soiled near the floor drain under the unit but the other areas are free of old debris.)
Basic - Garbage on the ground and/or pad around dumpster. **Warning**
(Upon callback boxes under dumpsters. Plastic lids, cups, cans, paper bags, cigarette debris is observed on the ground.)
Basic - Single-service articles stored on a soiled surface. (Roll of plastic wrap on soiled cut dispenser.) **Warning** (Upon callback dried food debris is observed on plastic wrap dispenser at back prep.)
Basic - Wall soiled with accumulated black debris in dishwashing area. **Warning**. (Upon callback , area directly behind the dish machine has a build up of mold like debris.)
Intermediate - Multiple areas:
Accumulation of food debris in the dipper well. Water is cloudy white, well has a soil ring and fruit is observed in the water. Complied.
On fudge dispenser at drive thru. (Upon callback fudge dispenser is still soiled.)
