Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

14-25-4    Basic - Establishment using wood (other than a hard, close-grained wood) cutting board lining flat top grill.
36-73-4    Basic - Floor soiled/has accumulation of debris. Grease build up under fryers on back cooks line.
08B-12-4    Basic - Food stored in holding unit not covered. Salad reach in cooler on cooks line. Operator brought corresponding lids. **Corrected On-Site** **Repeat Violation**
08B-38-4    Basic - Food stored on floor. Gallon of syrup on floor in front counter area.
10-07-4    Basic - In-use utensil stored in standing water less than 135 degrees Fahrenheit. Water was 106°. Had cook turn flame on. **Corrective Action Taken**
16-38-4    Basic - Inaccurate/damaged temperature gauge(s) on dishmachine. Give no reading for any cycle.
42-01-4    Basic - Wet mop not stored in a manner to allow the mop to dry. Mop in mop bucket with no water by stand up Dairy products cooler in server area.
41-19-4    High Priority - Insecticide/rodenticide use not in compliance with regulations. Boric acid used in bulk application. Not in cracks and crevices, but down base boards and on top,of outlets down cooks line.
03B-01-4    High Priority - Potentially hazardous (time/temperature control for safety) hot held at less than 135 degrees Fahrenheit or above.Mashed potato 132°, gravy 134°, green beans 128°. Had operator reheat items for hot hold. All tens reached above 165° **Corrected On-Site**
08A-05-4    High Priority - Raw animal food stored over ready-to-eat food. Shelled eggs over feta cheese and sliced green tomato in salad station. Also, meats removed from original package, raw beef over shrimp in reach in freezer. **Corrected On-Site** **Repeat Violation**
35A-05-4    High Priority - Roach activity present as evidenced by live roaches found. 29 live roaches along water line, under 3 comp sink in dish area.
16-34-4    Intermediate - No quaternary ammonium chemical test kit provided when using quaternary ammonium chemical sanitizer at three-compartment sink/warewashing machine.
