Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

Observed multiple TCS foods in freezer storage truck at temperatures of 17°- 21 °. Operator called engineer and adjusted truck temperature and ordered a second freezer storage truck. Temperature log will be kept in truck for temperature monitoring. **Corrective Action Taken**
14-41-4    Basic - Walk-in cooler door gasket torn/in disrepair. In production cooler.
49-03-4    Debris present in boiler room. For reporting purposes only. **Repeat Violation**
03A-02-4    High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Waffle batter at 60° in walk in cooler out of temperature less than four hour. Chef discarded the waffle batter. **Corrected On-Site**
08A-05-4    High Priority - Raw animal food stored over ready-to-eat food. Raw shell eggs stored over ready to eat pasteurized eggs in walk in cooler. **Corrected On-Site**
14-76-5    Intermediate - Kitchen walk-in freezer not maintained in good repair. Do not store potentially hazardous (time/temperature control for safety) food in this unit until the unit is repaired.
