Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

32-04-4    Basic - Bathroom located inside establishment not completely enclosed with tight-fitting, self-closing doors. **Repeat Violation**
23-25-4    Basic - Build-up of grease/dust/debris on hood filters.
24-05-4    Basic - Clean glasses, cups, bowls, plates, pots and pans not stored inverted or in a protected manner. Pans and plates in kitchen not stored inverted.
28-02-4    Basic - Condensation or other drainage not disposed of according to law. Water draining from ground exterior of building near railroad tracks.
16-13-4    Basic - Equipment and utensils not washed, rinsed and sanitized in the correct order in three-compartment sink. Do not use dishes/equipment not properly sanitized. No sanitize step. Recheck 12-2-15 callback performed while establishment is closed for eos. Unable to observe.
29-27-4    Basic - No mop sink or curbed cleaning facility provided. This must be complied by 12-8-15.
14-52-4    Basic - Nonfood-contact surfaces not designed and constructed to allow easy cleaning and maintenance. Shelves in walk in cooler not easily cleanable. Shelves in walk in cooler made of particle board.
14-67-4    Basic - Reach-in cooler gasket torn/in disrepair.
23-12-4    Basic - Walk-in cooler shelves soiled with encrusted food debris.
22-45-4    High Priority - Food-contact surfaces not sanitized after cleaning, before use. Do not use equipment/utensils not properly sanitized. Employee cutting raw chicken washed and rinsed knife and cutting board with no sanitization step. I discussed the proper way to do dish ware with the employee and had her sanitize the utensils. **Corrective Action Taken** Recheck 12-2-15 unable to observe establishment closed due to eos.
29-34-4    High Priority - Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. Exterior of building.
53B-01-5    Intermediate - No proof of required state approved employee training provided for any employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233.
