Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.

Basic - Nonfood-contact counters at server stations exposed to splash/spillage not constructed of materials that are corrosion resistant, non-absorbent, smooth and easily cleanable. **Warning**

Observed heavy build up on outside of bulk plastic containers storing flour in baking area. **Warning**
Basic - Working containers of food removed from original container not identified by common name. Observed food prepared on site in containers inside walk-in coolers and walk-in freezer without labels. **Warning**
High Priority - Reduced oxygen packaged fish packaged onsite no longer frozen and not removed from reduced oxygen package.
Observed tuna thawed without removing from reduced oxygen packaging in walk in cooler. **Warning**
High Priority - Stop Sale issued on potentially hazardous (time/temperature control for safety) food due to temperature abuse. Observed approximately 3 cases of raw chicken stored in bulk container stored overnight at an average temperature of 48 °F. **Corrective Action Taken** **Warning**
High Priority - Toxic substance/chemical stored in food preparation area with potential to cause cross contamination.
Observed can of WD-40 in prep area. **Corrected On-Site** **Warning**
Intermediate - Ready-to-eat, potentially hazardous (time/temperature control for safety) food prepared onsite and held more than 24 hours not properly date marked.
Observed several containers of food held over 24 hours without date mark. **Warning**
