Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

24-27-4    Basic - Clean equipment/dishware/utensils stored next to handwash/ exposed to splash. Observed in the dish machine room.
12B-07-4    Basic - Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Observed bottle water stored near chemicals in the dish machine room,removed. **Corrected On-Site**
24-08-4    Basic - Equipment and utensils not properly air-dried - wet nesting. Pans stored on storage shelve above three compartment sink.
36-41-4    Basic - Fan cover in walk-in cooler/freezer has accumulation of dust or debris. Observed inside walk cooler # 9 1/13/16 **Repeat Violation**
36-18-4    Basic - Floor tiles cracked, broken or in disrepair. Observed three compartment sink, floor tiles cracked underneath located in the dishmahine room
08B-52-4    Basic - Food stored under dripping water. In walk in cooler number one.
36-72-4    Basic - Walk-in cooler/walk-in freezer floor soiled. Observed the floor inside free|er.
36-26-4    Basic - Wall soiled with accumulated black debris in dishwashing area.
21-12-4    Basic - Wet wiping cloth not stored in sanitizing solution between uses. Observed on the drain board located in the dish machine room. 1/13/16 **Repeat Violation**
02D-01-5    Basic - Working containers of food removed from original container not identified by common name. Graham crack crumbs unlabeled on the storage shelve in the back prep area. **Corrected On-Site**
12A-07-4    High Priority - Employee failed to wash hands beforechanging gloves and/or putting on gloves to work with food. Observed employee in the grill area.
35A-02-5    High Priority - Live, small flying insects in kitchen, food preparation area, or food storage area. Observed two flying insects in the back prep area, and near office.
22-07-4    Intermediate - Slicer blade guard soiled with old food debris. Observed old food dried on the slicer in the located in th prep area.
