Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

36-26-4    Basic - Wall soiled with accumulated black debris in dishwashing area. (The lower dish wall under the counters) **Repeat Violation**
03A-15-4    High Priority - All potentially hazardous (time/temperature control for safety) foods in reach-in cooler cold held at greater than 41 degrees Fahrenheit. (Reach-in cooler: raw chicken 52°f, raw beef 53°f, raw pork 52°f - cook moved the food to the deep freezer to cool) **Corrective Action Taken**
41-07-4    High Priority - Container of medicine improperly stored. (Bottle of ibuprofen sitting in kitchen prep table - the manager moved the ibuprofen away from food prep area) **Corrected On-Site**
22-20-4    Intermediate - Accumulation of black/green mold-like substance in the interior of the ice machine. (Interior white panel soiled) **Repeat Violation**
22-28-4    Intermediate - Interior of reach-in cooler soiled with accumulation of food residue. (The reach-in cooler fan covers are soiled)
14-77-5    Intermediate - Reach-in cooler not maintained in good repair. Do not store potentially hazardous (time/temperature control for safety) food in this unit until the unit is repaired. (Cook line unit not working properly)
22-06-4    Intermediate - Slicer blade soiled with old food debris.
45-05-4    Portable fire extinguisher missing from its designated location. For reporting purposes only. (Fire extinguisher sitting on top of the dish machine) **Repeat Violation**
