Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

08B-38-4    Basic - Food stored on floor. 50 lb bag of onions on floor by ice maker.
10-17-4    Basic - In-use knife/knives stored in cracks between pieces of equipment. **Corrected On-Site**
10-11-4    Basic - In-use rice scoop/spoon stored in standing water less than 135 degrees Fahrenheit. Water temped at 129°.
10-06-4    Basic - In-use utensil not stored with handle above the top of potentially hazardous (time/temperature control for safety) food and rim of the container. 2nd rice scoop left in rice pot in kitchen. **Corrected On-Site**
35B-04-4    Basic - Outer openings of establishment cannot be properly sealed when not in operation. Observed both rear screen doors, dishwash room and ice room with at least 1 inch gap at bottom.
14-33-4    Basic - Reach-in cooler shelves with rust that has pitted the surface-various units throughout facility.
23-14-4    Basic - Shelf under preparation table soiled with food debris low shelf in dishwash room.
23-05-4    Basic - Soil residue build-up on nonfood-contact surface. Bottom shelf of low table in dishwash room.
36-30-4    Basic - Wall not smooth, nonabsorbent and easily cleanable in food preparation, food storage, warewashing areas or bathroom. Wall/trim strip at overhead shelves in dishwash room in poor repair. Particle board type strip overhead not durable.
21-12-4    Basic - Wet wiping cloth not stored in sanitizing solution between uses. Cloths left on counter at wait station. **Repeat Violation**
03A-02-4    High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Sprouts holding at 60°. Advised rapid chill, possibly with ice. Cook chilled sprouts with ice, new temp 43°. **Corrected On-Site**
08A-10-4    High Priority - Raw animal food stored over ready-to-eat food in reach-in cooler. Whole shell eggs over teriyaki sauce in reach in cooler by ice maker.
22-21-4    Intermediate - Accumulation of black/green mold-like substance inside the ice bin. Top of cooler bin used on wait line in kitchen.
22-22-4    Intermediate - Encrusted material on can opener blade.
22-12-4    Intermediate - Metal stem-type thermometer soiled. **Corrected On-Site**
31B-02-4    Intermediate - No paper towels or mechanical hand drying device provided at handwash sink. No towels etc at HANDWASH sink in dishwash room.
