Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

08A-05-4    High Priority - Raw animal food stored over ready-to-eat food. Raw ground beef in a bag over bucket of sweet sauce. Moved beef. **Corrected On-Site**
35A-05-4    High Priority - Roach activity present as evidenced by live roaches found. One live roach at front handwash sink. One live roach on floor under cook line. Stepped on floor roach. **Corrective Action Taken**
16-32-5    Intermediate - Incorrect chemical test kit provided for measuring the concentration of the sanitizer solution used in the three-compartment sink and/or dishmachine. Using chlorine has pool kit that does not have 50-100 parts per million range.
05-08-4    Intermediate - No probe thermometer provided to measure temperature of food products. Gave thermometer to operator. **Corrected On-Site**
03D-16-4    Intermediate - Potentially hazardous (time/temperature control for safety) food covered while cooling. cooked noodles at 12:28 (84°F - Cooling 82-84°f at 12:50) in walk-in cooler covered with wrap. Uncovered. Possibly too full also. Talked about putting it into two containers. **Corrective Action Taken**
