Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

14-01-4    Basic - Bowl or other container with no handle used to dispense food. Portion cup in tomato sauce on make table cutting board. Bowl in buffalo bleu sauce, no handle. Styrofoam bowl used as scoop in gravy stored in walk in cooler. **Warning**
23-06-4    Basic - Build-up of food debris, dust or dirt on table mount for can opener above open flour and sugar bags below the table top. Also on the fire extinguisher at the fryers. Also buildup in the cooler door hinges and exterior edges where gaskets contact the unit. **Warning**
23-03-4    Basic - Build-up of grease and debris on the range dials, fryer and stove exteriors. **Warning**
51-11-4    Basic - Carbon dioxide/helium tanks not adequately secured. **Warning**
08B-45-4    Basic - Cases of food stored on floor in walk-in cooler. Tomatoes, chicken. **Warning**
24-26-4    Basic - Clean equipment/utensils not stored at least 6 inches above the floor. Sheet pans between shelf and upright reach in cooler on the floor. **Warning**
24-05-4    Basic - Clean glasses, cups, bowls, plates, pots and pans not stored inverted or in a protected manner. Lids in a Lexane container by the can opener table where flour and sugar are stored. The soiled can opener is stored on the now-dirty lids. Also, flour or other white powder has spilled onto the lids. **Warning**
24-06-4    Basic - Clean knives stored under the plasticware/condiment black bins at the front line. **Warning**
28-02-4    Basic - Condensation or other drainage not disposed of according to law. Pooled soiled liquid in the beer keg cooler at the front line. **Warning**
36-71-4    Basic - Floor drains/drain covers heavily soiled. Between stove and 3 bay. **Warning**
36-01-4    Basic - Floor not cleaned when the least amount of food is exposed. Behind the grill press table and the cookline. Heavy french fry buildup between the wall and the fryers as well as between the fryer and the stove. **Warning**
08B-12-4    Basic - Food stored in holding unit not closed/sealed. Bag of flour and bag of sugar n lower table shelf. **Warning**
08B-38-4    Basic - Food stored on floor. 50lb bag of unopened flour. White bag is very dirty with grease or water debris. Adjacent to the bag is a case of rice and several rice boxes. **Warning**
33-19-4    Basic - Garbage on the ground and/or pad around dumpster. Portion cups, plastic forks and spoons, gloves, cups. **Warning**
36-14-4    Basic - Grease accumulated on kitchen floor and/or under cooking equipment. Observed pooled next to the floor drain between the grill and 3 bay. **Warning**
36-47-5    Basic - Hood soiled with accumulated grease. Drips along entire wall area above the shelf over the cookline. **Warning**
24-08-4    Basic - Ice bucket at outdoor bar is not inverted for proper drying. Pooled water at 72°F is observed in the bucket. Bucket must be washed and sanitized before use. **Warning**
10-08-4    Basic - Ice scoop handle in contact with ice. At outdoor bar. **Warning**
10-17-4    Basic - In-use knife/knives stored in cracks between pieces of equipment. 8 knives stacked between the soiled area between the make table upper area doors. Debris is observed on the knives. **Warning**
10-06-4    Basic - In-use utensil not stored with handle above the top of potentially hazardous (time/temperature control for safety) food and rim of the container. Bowl in closed container of gravy in walk in cooler. **Warning**
22-08-4    Basic - Interior of oven has heavy accumulation of black substance/grease/food debris. **Warning**
36-10-4    Basic - Kitchen floor is soiled between the wall and upright cooler with cardboard, portion cups, paper, broken wall foam. **Warning**
51-18-6    Basic - No copy of latest inspection report available. **Warning**
40-01-4    Basic - No suitable facilities provided to store employee clothing and other possessions. Coats observed in a clean food equipment bin and on an opened box of fortune cookies. **Warning**
33-16-4    Basic - Open dumpster lid where trash is observed to include unbagged ice cream container. **Warning**
03A-05-4    Basic - Potentially hazardous (time/temperature control for safety) food not maintained frozen solid in a freezer. Ice cream, opened containers as well as unused containers are temping at 13°F and 18°F but have ice cream puddles in the opened gallon and very soft ice cream in the full, unopened gallons. **Warning**
25-05-4    Basic - Single-service articles improperly stored. Plastic take out bowls in a bin near the flor and sugar. Bowls are unwrapped, uncovered, with aprons loosely pile on top. A flannel coat is lying in an adjacent bin on other unwrapped, uncovered single service items. Unwrapped striped straws stored at the ice cream cooler at the front line in a manner that can cause them to be contaminated. They are observed resting against the cooler exterior and can touch clothing when using the cooler or walking by. **Warning**
25-06-4    Basic - Single-service articles not stored inverted or protected from contamination. Take out containers over sandwich press. Paper boats next to the press. **Warning**
25-09-4    Basic - Single-service items for customer self-service not properly protected to prevent contamination. Cork screw tool stored in top paper boat as they are not inverted. **Warning**
23-05-4    Basic - Soil residue build-up on stacked empty sani buckets next to sugar and flour bags. On door edge of reach in ice cream freezer. **Warning**
23-09-4    Basic - Soiled reach-in cooler gaskets. **Warning**
33-34-4    Basic - Storage area not maintained clean and organized. Corner in kitchen where slicer table is located. 27-12-4    High Priority - Water stopped working near end of inspection. Manager and staff unaware as to why. They hung a sign to close the establishment until it is remedied. Staff educated to call inspector back to verify water supply prior to reopening. **Warning**
22-02-4    Intermediate - Accumulation of food debris/grease on strayer hose at 3 bay. Rotted vegetable scrap in the walk in cooler drawers where whole cheery tomatoes are stored. **Warning**
53A-10-4    Intermediate - Certified food manager unable to answer basic Food Code questions pertaining to safe operation of establishment. Proper cleaning of food equipment such as sandwich press, storage of food such as flor and rice packages. Proper storage of employee clothing, aprons. **Warning**

27-23-4    Intermediate - Hot water at handwash sink does not reach 100 degrees Fahrenheit. Restrooms. Hot side 82°F , cold side 78°F. Front line, 93°F hot side, 77°F cold side after several minutes of running the sink. **Warning**
22-28-4    Intermediate - Interior of reach-in cooler soiled with accumulation of food residue. Upper make table around doors and bins, lower make table throughout interior and upright cooler. Ice cream reach in freezer at the front line has loose ice and loose ice cream in the compartment around the ice bowl and ice cream containers. **Warning**
05-08-4    Intermediate - No probe thermometer provided to measure temperature of food products. Infrared thermometer observed and a meat thermometer for 100°F or hotter. No cold food thermometer. **Warning**
