A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - In-use utensil in nonpotentially hazardous (non-time/temperature control for safety) food not stored with handle above top of food within a closed container. Handle in sugar in container on rack.
High Priority - Pesticide/insecticide labeled for household use only present in establishment. Home defense pest spray used inside and outside around doors per manager. Explained to manager that can only be used outside. Item is in mop sink.
High Priority - Potentially hazardous (time/temperature control for safety) hot held at less than 135 degrees Fahrenheit or above. Beef and bean burritos 120°F, 119°F, 123°F, 130°F. In containers on prep table near oven. Items placed in oven to reheat. 20 minutes later burritos 145°F, 143°F. Out back in oven to reheat. **Corrective Action Taken**
High Priority - Raw animal food stored over clean dishes. Raw eggs over clean dishes on dish rack next to triple sink. Moved by manager. **Corrected On-Site**
High Priority - Raw animal food stored over ready-to-eat food. Raw shell eggs over prepared salads in double door reach in cooler next to single door reach in cooler in kitchen. Items moved by manager. **Corrected On-Site** **Repeat Violation**
High Priority - Vacuum breaker missing at mop sink faucet or on fitting/splitter added to mop sink faucet. Back flow required on open side of splitter. **Repeat Violation**
