A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Dead roaches on premises. 7 dead between stainless prep table and stainless shelving holding single service wrappers for burgers. 53 dead on glue trap in bun warmer conveyor. 1 dead next to soda fountain near single service cups. I dead under fan on top of soda fountain. 1 dead on paperwork on back of hood system, 1 dead in filter on front of ice cream machine, 1 dead under blender on ice cream prep table, 1 under fan on 2nd drive thru soda fountain.
Basic - Employee personal items stored in or above a food preparation area. Cell phone on bread rack. Employee moved phone to desk area. **Corrected On-Site**
High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Dairy mix in one cream machine 46°F .
High Priority - Presence of insects, rodents, or other pests. Small white /clear ants throughout kitchen, office, hood system and ceiling. Too many to count.
High Priority - Roach activity present as evidenced by live roaches found. 5 live roaches under soda box rack. 3 live roaches observed when I lifted the ice machine motor cover. 3 large live roaches near drain in maintenance room back of building exterior entrance near restroom.
High Priority - Roach excrement and/or droppings present. Excrement and 4 egg casings in ice machine motor compartment. On wall above 3 compartment sink.
