Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

10-20-4    Basic - In-use tongs stored on equipment door handle between uses.oven handle.
14-31-4    Basic - Nonfood-grade bags used in direct contact with food. Used in direct contact with chicken and ribs inside the reach in freezer that is in the hall to the kitchen.
25-09-4    Basic - Single-service items for customer self-service not properly protected to prevent contamination. Operator moved the utensils behind the counter.
23-05-4    Basic - Soil residue build-up on nonfood-contact surface. Accumulation of food debris and residues under coffee machine.
29-11-4    Basic - Water leaking from pipe and/or faucet/handle. The one located next to the steam table.
35A-05-4    High Priority - Roach activity present as evidenced by live roaches found. Observed Approximately 13 plus live roaches in the kitchen area under shelf located behind prep table and approximately 4 live roaches inside open closet next to the stove located in the kitchen area used to store pot and pans.
31A-03-4    Intermediate - Handwash sink not accessible for employee use due to items stored in the sink. Front counter. Operator moved them from there. **Corrected On-Site**
31A-11-4    Intermediate - Handwash sink used for purposes other than handwashing. Front counter handwash sink used to wash dishes. operators stop washing some dishes there. **Corrective Action Taken** **Repeat Violation**
