A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Sauce, 67 f, cheese 52 f, cooked veggies 49 f, pizza RIC, operator started to use time in lieu for these products with a 4 hour limit, food set up at about 11:30 am. **Corrective Action Taken** **Warning**
Intermediate - Establishment advertised crab meat salad and crab meat sub on Manu but used imitation crab for these items, a warning was issued to correct this violation.
Also observed in Manu advertised flounder Francese and stuffed flounder but observed Frozen swai available on site only. As per operator he was in the process of changing manus which are being printed and completed in about one week, the operator scratched flounder word on 20 manus available in the establishment and wrote swai instead, a "" corrected on site "" was documented for the fish issue but A warning was issue to print new manus with the correction. **Warning**
Intermediate - Ready-to-eat, potentially hazardous (time/temperature control for safety) food prepared onsite and held more than 24 hours not properly date marked. Pasta, lasagna, meatballs, WIC. **Repeat Violation** **Warning**
