A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Dollies, pallets, racks or skids used to store or transport packaged food not designed to be moved easily to allow for cleaning access. Observed pallets type and crates to hold food or equipment making cleaning impossible in the area.
Basic - Wet wiping cloth not stored in sanitizing solution between uses. Observed wet wiping towels in front counter and kitchen not stored in sanitizing solution between uses.
High Priority - Employee failed to wash hands before changing gloves and/or putting on gloves to work with food. Observed employee leaving kitchen area going to front counter. Then, employee came back to kitchen area, changed gloves to engaged in food preparation without washing hands.
High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Blood sausage 47° f, sausage 53° f, chicken 56° f, liver steaks 58° f
High Priority - Roach activity present as evidenced by live roaches found. Observed approximately 12 live roaches around shelves in food and dry storage area.
Intermediate - Cold holding equipment not maintained in good repair. Do not store potentially hazardous (time/temperature control for safety) food in this unit until the unit is repaired. Observed 2 reach in coolers by kitchen entrance no keeping foods cold.
Intermediate - Manager lacking proof of food manager certification. A list of accredited food manager certification examination providers can be found at http://www.myfloridalicense.com/dbpr/hr/food-lodging/managercertification.html. Observed food manager certification expired since October of 2015.
Intermediate - No plan review submitted and approved - renovations were made or are in progress. Must submit plans, plan review application and payment for plan review to DBPR H and R Plan Review office located at 2601 Blair Stone Rd., Tallahassee, FL 32399-1011. Observed added seating area with bathrooms and possible extension of bar/front counter.
