Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

35A-03-4    Basic - Dead roaches on premises. 1 dead roach in drink area near wall behind soda fountain. Called D3 office spoke to Doug Peterson had operator discard dead roach and clean area. **Corrective Action Taken**
35B-01-4    Basic - Exterior door has a gap at the threshold that opens to the outside. Door in rear has gap at the bottom. **Repeat Violation**
14-67-4    Basic - Reach-in cooler gasket torn/in disrepair. Reach in cooler gasket near chest freezer in prep area torn gasket.
21-12-4    Basic - Wet wiping cloth not stored in sanitizing solution between uses. Wet cloth on prep area not in sanitizer bucket.operator moved to bucket. **Corrective Action Taken**
21-07-4    Basic - Wiping cloth chlorine sanitizing solution not at proper minimum strength. 200ppm chlorine corrected to 75ppm. **Corrective Action Taken**
31A-13-4    Intermediate - Employee used handwash sink as a dump sink. Hand sink used for dump sink in dish area ice in hand sink. Cleaned sink and educated employees. **Corrective Action Taken**
22-22-4    Intermediate - Encrusted material on can opener blade. Operator Moved to dish area to clean can opener blade. **Corrective Action Taken**
03D-20-4    Intermediate - Potentially hazardous (time/temperature control for safety) food cooled in quantity deeper than 4 inches. 6 inches deep cooling roux. Operator moved to larger pan for 2 inch deep cooling. **Corrective Action Taken**
22-07-4    Intermediate - Slicer blade guard soiled with old food debris. Slicer guard with food debris. Operator cleaned guard area. **Corrective Action Taken**
