Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

08B-38-4    Basic - Food stored on floor. Cooking oil stored on floor.
14-31-4    Basic - Nonfood-grade bags used in direct contact with food. Take out bags used for frozen food storage.
42-01-4    Basic - Wet mop not stored in a manner to allow the mop to dry. **Repeat Violation**
21-12-4    Basic - Wet wiping cloth not stored in sanitizing solution between uses. Wet cloths on cutting board. Operator moved wet wiping cloths to sanitizer bucket. **Corrective Action Taken**
03A-08-4    High Priority - Cooked meat/poultry cold held at greater than 41 degrees Fahrenheit.sliced Pork (48°F - Cold Holding) in deli style reach in cooler . operator moved to reach in cooler for quick chill. **Corrective Action Taken** **Repeat Violation**
01B-01-4    High Priority - Dented/rusted cans present. See stop sale. Pineapple juice, bamboo shoots and soy sauce in dented cans on dry storage shelves.
12A-05-4    High Priority - Employee used tobacco, ate, or drank then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Cook on cook line left cookline to dry storage to get drink came back to work on cook line no hand wash. Had cook wash hands and educated on proper hand washing.
03A-02-4    High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit.sprouts (48°F - Cold Holding) in deli style reach in cooler. Chicken ( 44°F - cold holding) in front refrigerator. Operator moved to reach in cooler for quick chill. **Corrective Action Taken** **Repeat Violation**
08A-18-5    High Priority - Raw animal foods not properly separated from one another based upon minimum required cooking temperature in reach-in freezer - all products not commercially packaged. Raw frozen chicken over raw frozen pork and frozen beef not commercially packaged in stand up reach in freezer behind cooks line. Operator moved all frozen proteins to proper areas for storing. **Corrective Action Taken**
05-05-4    Intermediate - Ambient air thermometer in holding unit not accurate within plus or minus 3 degrees Fahrenheit. Thermometer reading 80°F items temped at 42 in reach in cooler near cash register.
31A-02-4    Intermediate - Handwash sink not accessible for employee use due to being blocked by 2 stools. Operator moved stools **Corrective Action Taken** **Repeat Violation**
03D-20-4    Intermediate - Potentially hazardous (time/temperature control for safety) food cooled in quantity deeper than 4 inches.Chicken (44°F - Cooling); egg rolls (44°F - Cooling) cooling in hotel pan more than 4 inches deep.
03D-19-4    Intermediate - Potentially hazardous (time/temperature control for safety) food left at room temperature to cool.noodles (78°F - Cooling) had operator move to reach in cooler for quicker cool operator said they cooked. 1/2 hour ago. **Corrective Action Taken** **Repeat Violation**
02C-02-4    Intermediate - Ready-to-eat, potentially hazardous (time/temperature control for safety) food prepared onsite and held more than 24 hours not properly date marked. Some items in walk in cooler no date mark. Operator date marked all items in walk in cooler. **Corrective Action Taken**
