Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

24-05-4    Basic - Clean glasses, not stored inverted in a protected manner. Observed glassware in upright frost freezer with cup lips contacting the ice.
14-09-4    Basic - Cutting board has cut marks and is no longer cleanable. Make table. Board can be flipped over after cleaning and sanitizing the station.
08B-49-4    Basic - Employee personal food not properly identified and segregated from food to be served to the public. Partially consumed juice bottle on dry storage goods rack. Discarded by owner. **Corrected On-Site**
35B-01-4    Basic - Exterior door has a gap at the threshold that opens to the outside. Storage room where soda boxes are racked.
36-10-4    Basic - Floor soiled under cookline equipment. Also under/behind the ice machine near the mop sink.
36-18-4    Basic - Floor tiles cracked, broken or in disrepair. Missing sufficient grout in walkway between front line to dish machine.
33-19-4    Basic - Garbage on the ground and/or pad around dumpster.
36-24-5    Basic - Hole in or other damage to wall under 3 bay sink.
14-69-4    Basic - Ice buildup in reach-in freezer. Beer mug freezer where mouth contact areas are touching the ice.
10-20-4    Basic - In-use tongs stored on equipment door handle between uses. 6 pair on single oven door. Staff educated on tong storage.
22-04-4    Basic - Lime scale build-up inside ice machine.
14-40-4    Basic - Nonfood-contact area in poor repair. Rotting wood at kitchen window above bulk containers. Exterior bottom of large ice machine has rust damage and torn tape.
36-70-4    Basic - Objectionable odor outside.
25-06-4    Basic - Single-service articles not stored inverted or protected from contamination. Portion cups at make table. **Corrected On-Site**
23-05-4    Basic - Soil residue build-up on nonfood-contact surface. Exterior of coolers.
21-14-4    Basic - Soiled cloths, linen, aprons, coats, or other uniform apparel not kept in a suitable container prior to laundering. Hanging on rack by clean dishes and trash can. **Corrected On-Site**
08B-12-4    Basic - Tortillas not covered on top of microwave. **Corrected On-Site**
36-72-4    Basic - Walk-in freezer floor soiled.
36-30-4    Basic - Wall not smooth, nonabsorbent and easily cleanable in food preparation, food storage, warewashing areas or bathroom. Peeling wall behind dish machine. Warewash line walls behind lid shelves. Peeling next to ice machine. Peeling in walk in freezer.
21-12-4    Basic - Wet wiping cloth not stored in sanitizing solution between uses. Wet towel on hostess counter. **Corrected On-Site** **Repeat Violation**
22-42-4    High Priority - Chlorine sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. 0 ppm chlorine corrected to 75ppm. **Corrected On-Site**
09-01-4    High Priority - Employee touching ready-to-eat food with their bare hands - food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. Employee moved some chips in the chip holder with bare hand while explaining how interior was cleaned. Corrected employee to use a utensil, not the bare hand. **Corrective Action Taken**
28-13-4    High Priority - Raw sewage on ground of establishment near the dumpsters and front parking lot entrance.
28-26-4    High Priority - Sewage/wastewater backing up through floor drain at outdoor can wash. Plumber called in.
29-34-4    High Priority - Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb.
22-02-4    Intermediate - Accumulation of food debris/grease on food-contact surface. 3 bay hose sprayer where vegetables are washed.
22-24-4    Intermediate - Accumulation of gray mold-like substance on/around soda dispensing nozzles. **Repeat Violation**
02C-03-4    Intermediate - Commercially processed ready-to-eat, potentially hazardous (time/temperature control for safety) food opened and held more than 24 hours not properly date marked after opening. Shredded cheese in walk in cooler from yesterday. **Repeat Violation**
