which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.

Observed potentially hazardous food out of allowable temperature range at hooded cooler on cooks line. Per operator food was pulled from larger reach in cooler and put on cooks line for breakfast and is restocked as needed. Food was not prepared today. Sliced tomatoes; Plant Foods (45°F - Cold Holding) diced tomatoes ; Plant Foods (48°F) melons; Plant Foods (51°F - Cold Holding). Observed pooled eggs on cooks line being held at room temperature: pooled eggs (no temperature control); Dairy (50°F). Advised operator to lower temperature at reach in cooler and use time as public health control for pooled eggs. The operator lowered temperature at unit. Ambient 38.3°F after approximately one hour.**Warning** **Repeat Violation** **Warning** - From follow-up inspection on 2017-02-22: High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Operator is attempting to use time as public health control for food items (eggs) but is not time stamping properly. Advised operator to assess time that food item was pulled and to discard after four hours has expired. **Time Extended**
