Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Lights in food preparation, food storage or warewashing area missing the proper shield, sleeve coatings or covers. Cook line. **Repeat Violation** **Warning**
Basic - Perimeter walls and roofs do not effectively protect establishment against environmental cross contamination or the entrance of pests. Baseboards in dish area are in disrepair and holes in some ceiling tiles. **Warning**
Basic - Potentially hazardous (time/temperature control for safety) food thawed at room temperature. Observed sausages at room temperature in the three compartment sink. **Warning**
High Priority - A Rodent activity present as evidenced by rodent droppings found. Observed 8 dry droppings on top of the small pizza oven, three dry droppings on front the standing cooler, 6 dry droppings under two compartment sink, 6 dry droppings in the dishwasher area, approximately 40 dry droppings under the big pizza oven, 2 dry droppings under steam table, 10 dry droppings underneath of stoves, 4 dry droppings on top the salt bin and 2 dry droppings under the table at the dining area. Also approximately 20 dry droppings on floor in the outside dry storage room. **Admin Complaint**
High Priority - Raw animal foods not properly separated from each other in holding unit. Observed raw chicken over raw beef in top cooler at cook line. **Warning**
High Priority - Stop Sale issued due to adulteration of food product. Observed 8 one pound boxes of pasta with gnaw marks and pasta was exposed in the outside dry storage room. **Warning**
Intermediate - Ready-to-eat, potentially hazardous (time/temperature control for safety) food prepared onsite and held more than 24 hours not properly date marked. **Repeat Violation** **Warning**
