The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Intermediate - - From inspection on 2017-04-27: Observed: Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Observed prepped squash at 49-50'F, covered and stacked in the walk-in cooler at 13:33. At 13:48 pm the temperature was the same. The squash was un stacked and uncovered. **Corrective Action Taken** **Warning** Priority Intermediate - From follow-up inspection on 2017-06-26: At 12:57 pm, observed prepped squash in covered, stacked pans with at temperature of 48-51°F. At 13:14 pm observed the same prepped squash was 48-51°F. At this rate the squash will not properly cool to 41°F within the allotted time. **Admin Complaint**
Intermediate - - From inspection on 2017-04-27: Observed: No proof of required state approved employee training provided for any employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. **Warning** Priority: Intermediate - From follow-up inspection on 2017-06-26: Observed that training was completed for 3 employees on 5/2/17, using International Foodservice Executives Association. More training still needs to be completed. **Time Extended**
