A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
High Priority - All potentially hazardous (time/temperature control for safety) foods in walk-in cooler cold held at greater than 41 degrees Fahrenheit.....pasta , cheese, sauce, ham, all at 45°-46° ( franchise sauce 43°) in walk in cooler . Operator stated keep opening door all the time that make temperature high . Advised closed door all the time. **Corrective Action Taken** **Warning**
High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit....artichoke 47°, capers 48°, roasted pepper 46° in top reach in cooler .... Marinara sauce 58°, franchise sauce 50° in tall reach in cooler , pasta 58° in glass door reach in cooler in kitchen. Operator stated some food being open for lunch rush and some food back and forth to cooler that's make temperature high . Per operator food being held less than 4 hours . Discussed with operator time control on food or/ and covered the food all the time. High Priority - Potentially hazardous (time/temperature control for safety) food cooked/heated yesterday/on a previous day not cooled from 135 degrees Fahrenheit to 41 degrees Fahrenheit within a total of 6 hours. Food has been cooling overnight. See stop sale.......Observed at 4 pm cooked pizza sauce in the walk-in cooler in a full 22qt container at a temperature range of 50°-53° according to manager cooked yesterday and cooled overnight. Operator discarded pizza sauce at time of inspection. **Warning**
High Priority - Potentially hazardous (time/temperature control for safety) food identified in the written procedure as a food held using time as a public health control has no time marking and the time removed from temperature control cannot be determined. See stop sale....per operator cheese pizza being held more than 4 hours, other pizza , pizza sauce less than 4 hours .
