A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Bowl or other container with no handle used to dispense food....healthy salad and macaroni salad in walk in cooler. Operator moved the container. **Corrected On-Site** **Warning**
Basic - Dead roaches on premises....2 dead roaches in the draining tray underneath dry food storage reach in cooler by the bagel oven at prep area. Operator cleaned them up at time of inspection. **Repeat Violation** **Warning**
Basic - In-use utensil stored in standing water less than 135 degrees Fahrenheit.....several salad scoop stored in 70° water at front line . Operator moved it at time of inspection. **Corrected On-Site** **Warning**
High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit....milk maintaining temperature on ice at front line bagel station . High Priority - Raw animal food stored over ready-to-eat food in walk-in cooler....raw shall eggs above macaroni salad, tuna salad in reach in cooler . Operator properly stored it at time of inspection. **Corrected On-Site** **Warning**
High Priority - Roach activity present as evidenced by live roaches found....1 live roach in the draining tray underneath dry food storage reach in cooler by the bagel oven at prep area. ...1 live roach bagel speed cart by the bagel oven....2 live roaches on the wall underneath Dishmachine at dishwashing area....1 live roach in coffee storage cabinet at wait station. **Repeat Violation** **Warning**
High Priority - Rodent activity present as evidenced by rodent droppings found......approximately 10 dry rodent droppings in the draining tray underneath dry food storage reach in cooler by the bagel oven at prep area. Operator cleaned them up at time of inspection. **Warning**
Intermediate - Commercially processed ready-to-eat, potentially hazardous (time/temperature control for safety) food opened and held more than 24 hours not properly date marked after opening....beef base in walk in cooler . Operator date it at time of inspection. **Corrected On-Site** **Warning**
Intermediate - Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection....observed at 11:40 am cooked potatoes 116°-136° in a bus pan deeper than 4 inch cooling with covered in walk in cooler . At 12:36 pm take temperature again temperature reading was same above . Reviewed cooling process with operator. Operator place the potatoes in sheet tray and not covered in walk in cooler at time of inspection. **Corrective Action Taken** **Warning**
Intermediate - Ready-to-eat, potentially hazardous (time/temperature control for safety) food prepared onsite and held more than 24 hours not properly date marked....corn beef , chicken base , turkey in walk in cooler. Operator date marked the food at time of inspection. **Corrected On-Site** **Warning**
