Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

12B-12-4    Basic - Employee beverage container in a food preparation/clean dishware area does not have a lid and a straw or equivalent dispensing mechanism to prevent hand contact with lip contact area of drink container. Employee drinks with no lids nor straws throughout kitchen area. **Repeat Violation**

14-11-4    Basic - Equipment in poor repair. Chest freezer lid with rust and in disrepair. **Repeat Violation**
36-18-4    Basic - Floor tiles cracked, broken or in disrepair in serval areas of kitchen. **Repeat Violation**
08B-38-4    Basic - Food stored on floor. Box of raw chicken stored on kitchen floor while prepping . CAT inspector went over proper food storage practices while prepping with employee. **Corrective Action Taken** **Repeat Violation**
23-07-4    Basic - Gaskets with slimy/mold-like build-up. **Repeat Violation**
36-24-5    Basic - Hole in or other damage to wall. Serval areas of kitchen with wall damage and holes . **Repeat Violation**
10-11-4    Basic - In-use rice scoop/spoon stored in standing water less than 135 degrees Fahrenheit. Rice scoop in standing water on cooks line , CAT inspector went over proper in-use storage practices with manager . **Corrective Action Taken** **Repeat Violation**
21-04-4    Basic - In-use wet wiping cloth/towel used under cutting board. **Repeat Violation**
16-46-4    Basic - Old labels stuck to food containers after cleaning. **Repeat Violation**
06-05-4    Basic - Potentially hazardous (time/temperature control for safety) food thawed in standing water. Ribs thawing in standing water , COS , manager turned water on to continue the thawing process . **Corrected On-Site** **Repeat Violation**
21-12-4    Basic - Wet wiping cloth not stored in sanitizing solution between uses. **Repeat Violation**
08A-17-5    High Priority - Raw animal foods not properly separated from one another based upon minimum required cooking temperature in walk-in freezer - all products not commercially packaged. Raw chicken stored over raw shrimp in walk in cooler , CAT, inspector went over raw food storage practices with manager and shrimp was place on top shelf in walk in cooler . **Corrective Action Taken** **Repeat Violation**
22-20-4    Intermediate - Accumulation of black/green mold-like substance in the interior of the ice machine. **Repeat Violation**
31B-02-4    Intermediate - No paper towels or mechanical hand drying device provided at handwash sink. No paper towels at employee hand wash sink next to cooks line , COS, manager replaced paper towels at time of inspection. **Corrected On-Site** **Repeat Violation**
02C-02-4    Intermediate - Ready-to-eat, potentially hazardous (time/temperature control for safety) food prepared onsite and held more than 24 hours not properly date marked. Cooked noodles, egg rolls , chicken , held over 24 hrs not date marked in walk in cooler. **Repeat Violation**
