Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

23-07-4    Basic - Gaskets with slimy/mold-like build-up. On 2 door beverage air cooler. Employee cleaned gaskets. **Corrected On-Site**
36-14-4    Basic - Grease accumulated on kitchen floor and/or under cooking equipment. Throughout kitchen and on cook's line.
14-70-4    Basic - Ice buildup in walk-in freezer. Ice build up on lines in freezer.
29-49-5    Basic - Observed standing water in bottom of reach-in cooler. In expo cooler.
16-46-4    Basic - Old labels stuck to food containers after cleaning. On clean pans.
29-08-4    Basic - Plumbing system in disrepair.Faucet at dish area hand sink and at the triple sinks.
35A-05-4    High Priority - Roach activity present as evidenced by live roaches found. 2 live roaches in floor mat of cook's line. 3 live roaches inside broken steam well. 1 live roach on leg of prep table. 1 live roach on leg of fryer. Management has called pest control. Pest control is on its way. **Corrective Action Taken**
41-02-4    High Priority - Toxic substance/chemical stored by or with food. Sanitizer bucket on shelf next to buns, bread, and wrapped desert product. Manager moved to new location. **Corrected On-Site**
22-22-4    Intermediate - Encrusted material on can opener blade.
27-16-4    Intermediate - Hot water not provided/shut off at employee handwash sink. Hand sink near toast station at 80°f.
14-14-4    Intermediate - Nonfood-grade basting brush used in food. Paint brush style brush used for butter at toast station. Brush has metal plating and coarse bristles.
