A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Build-up of food debris, dust or dirt on nonfood-contact surface. Observed a build-up of old food inside cabinets on the cooks line. **Warning**
Basic - Clean utensils or equipment stored in dirty drawer or rack. Observed clean utensils stored in soiled containers in 4 drawers under the grills. The drawers are also soiled. **Warning**
Basic - Employee personal food not properly identified and segregated from food to be served to the public. Observed a Tupperware container of employee food stored in a hot hot box that has customer food in it. The employee food was removed. **Corrected On-Site** **Warning**
Basic - Fan cover in reach-in cooler has accumulation of dust or debris. Observed the fan guard in the 4 door upright reach-in cooler behind the front counter is soiled. **Warning**
Basic - Observed standing water in bottom of 4 door upright reach-in cooler behind the front counter. Observed a water build-up in the bottom of the Delfield reach-in cooler in the rear of the store. **Repeat Violation** **Warning**
Basic - Water leaking from pipe and/or faucet/handle. Observed water dripping onto food in the 4 door upright reach-in cooler behind the front counter. **Warning**
High Priority - Heat strip failed to indicate the sanitization temperature of 160 degrees Fahrenheit was achieved on the dish surface. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired. **Repeat Violation** **Warning**
High Priority - Potentially hazardous (time/temperature control for safety) food cooked/heated yesterday/on a previous day not cooled from 135 degrees Fahrenheit to 41 degrees Fahrenheit within a total of 6 hours. Food has been cooling overnight. See stop sale. Observed 6 approximately 10" deep closed cartons of rehydrated hash brown potatoes made on 11/27/17 have a temperature range of 45-49°F. **Warning**
High Priority - Roach activity present as evidenced by live roaches found. Observed approximately 10 inside a cabinet on the back wall on the cooks line. 1 inside another cabinet on the cooks line on the back wall. 4 more inside a cabinet on the back wall under a soda machine. **Warning**
High Priority - Roach excrement and/or droppings present. Observed roach excrement and a roach egg sack on a shelf inside a cabinet on the cooks line. **Warning**
High Priority - Stop Sale issued due to adulteration of food product. Observed water from a reachin cooler condenser dripping onto uncovered raw Park sausage patties. Observed 3 containers of hashbrown potatoes with holes in the bottom of the container in soiled standing water in a reach-in cooler. **Warning**
