Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

24-08-4    Basic - Equipment and utensils not properly air-dried - wet nesting. Observed clean dishware wet nesting on clean dishware rack in rear kitchen area. **Warning**

22-41-4    High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed chlorine 0 ppm corrected to 100 ppm. **Warning**
35A-05-4    High Priority - Roach activity present as evidenced by live roaches found. Observed 11 live roaches in rear prep areas, 2 in side prep area. **Warning**

41-27-4    High Priority - Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Observed chlorine 200 ppm in sanitizer bucket corrected to 50 ppm. **Corrected On-Site** **Warning**
02C-02-4    Intermediate - Ready-to-eat, potentially hazardous (time/temperature control for safety) food prepared onsite and held more than 24 hours not properly date marked. Observed multiple foods inside walking cooler prepared onsite and held longer than 24 hours without date marking. **Corrected On-Site** **Warning**
45-02-4    Portable fire extinguisher gauge in red zone. For reporting purposes only. Observed suppression system extinguisher wall-mounted in kitchen in recharge zone.
