Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Accumulation of food debris/soil residue on three compartment sink. Observed a mold like substance building up by the faucet of the 3 compartment sink. **Warning**
Basic - Fan cover in walk-in cooler/freezer has accumulation of dust or debris. Observed ceiling in walk in cooler accumulating a mold like substance. Hard to see as there is no light in there. **Warning**
Basic - Plumbing system in disrepair. Observed broken faucet at mop sink. Held together with tape. Also observed handwash sink in front; handle is in disrepair. As this is your only handwash sink in the restaurant, if it fails this could potentially lead to a restaurant closure. **Warning**
Basic - Single-service articles not stored inverted or protected from contamination. Observed take out containers with mortar mix dust on them as a bag is next to take out containers. **Warning**
High Priority - Displayed food not properly protected from contamination. Observed sandwich roles exposed to customers. No sneeze guard to protect against contaminants from customers. Employee moved roles. **Corrective Action Taken** **Warning**
High Priority - Toxic substance/chemical stored by or with clean or in-use utensils. Observed cleaning chemical bottles stored on shelf with clean utensils. **Warning**

Intermediate - Water treatment device has not been inspected or serviced according to manufacturer's instructions. Observed water filters under 3 compartment sink with no evidence of maintenance records. **Warning**
