Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

35B-01-4    Basic - Exterior door has a gap at the threshold that opens to the outside. Back/side door. Door sweep at bottom of door is very malleable and gaps are visible on both sides. **Repeat Violation**
36-73-4    Basic - Floor soiled/has accumulation of debris. Walk in freezer floor. Also, edges of floor near base boards in kitchen area don dish area has buildup of debris.
23-07-4    Basic - Gaskets with slimy/mold-like build-up. On reach in cooler on cook line. **Repeat Violation**
14-69-4    Basic - Ice buildup in reach-in freezer. Ice buildup in reach in freezer on cook line. Also, ice buildup on door of walk in cooler and on interior of walk in cooler.
09-01-4    High Priority - Employee touching ready-to-eat food with their bare hands - food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. Employee placing sandwich on plate with bare hands. Employee began wearing gloves after observed event. **Corrected On-Site**
14-15-4    High Priority - Nonfood-grade containers used for food storage - direct contact with food. Plastic "shoe boxes" used for biscuit storage. **Repeat Violation**
03A-02-4    High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Butter 70°. Item in basket in wait area. Manager stated item placed out 1 hour ago. Time moved to reach in refrigerator to cool.
29-34-4    High Priority - Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. Missing on faucet outside back door. Hose attached.
