Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Equipment and utensils not properly air-dried - wet nesting.
Moisture observed between plastic pans stored on shelf above three compartment sink.
Basic - Equipment in poor repair. Door to walk in cooler has some wood rot on one door and door on other side of cooler is pulling away from frame creating a gap.
Basic - Floor soiled/has accumulation of debris. Large amount of buildup under cook line. Some buildup noted under tables and behind reach in freezers in kitchen area. Some buildup noted under counters in bar area.
Basic - Lights in food preparation, food storage or warewashing area missing the proper shield, sleeve coatings or covers. On fixture in back area above slicer. **Repeat Violation**
High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly.

Fish 48°. Chicken 60°. Beef 52°. Bacon 50°. Shrimp 54°. Cheese 51°. Gouda cheese 52°. In reach in cooler on cook line. Items placed in line at open. Manager moved items to reach in freezer to rapidly reduce temp.
High Priority - Rodent activity present as evidenced by rodent droppings found.
Observed 3 dry droppings on top of soiled grease container.
Observed 7 dry droppings inside of cabinet under hand washing sink in mens room.
Intermediate - No paper towels or mechanical hand drying device provided at handwash sink. Missing at hand washing sink in bar area and kitchen area.

Intermediate - Raw/undercooked animal food offered and establishment has no written consumer advisory. Raw animal foods must be fully cooked prior to service.
Establishment has new temporary menus which do not have a consumer advisory listed. Item printed.
Intermediate - Reach-in cooler not maintained in good repair. Do not store potentially hazardous (time/temperature control for safety) food in this unit until the unit is repaired.

Intermediate - Ready-to-eat, potentially hazardous (time/temperature control for safety) food prepared onsite and held more than 24 hours not properly date marked. Cooked potatoes in walk in cooler.
