Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - In-use utensil stored in standing water less than 135 degrees Fahrenheit. Observed scoops in standing water at 68°F proximal to hooded reach in cooler for salad. **Corrected On-Site** **Warning**
High Priority - Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb at in use hose and active faucets at ware washing area. **Repeat Violation** **Warning**
Intermediate - Certified Food Manager or person in charge lacks knowledge of foodborne illnesses and symptoms of illness that would prevent an employee from working with food, clean equipment and utensils, and single-service items. **Warning**
Intermediate - Clam/mussel/oyster tags not marked with last date served. Observed 4 out of the 12 oysters tabs retained from December 2017 without date marking. **Repeat Violation** **Warning**
Intermediate - Commercially processed ready-to-eat, potentially hazardous (time/temperature control for safety) food opened and held more than 24 hours not properly date marked after opening. At kitchen, observed hot dogs and chocolate milk opened for at least 24 hours without date marking. **Corrected On-Site** **Warning**
Intermediate - Operator is not properly tracking/marking the number of days ready-to-eat, potentially hazardous (time/temperature control for safety) food prepared onsite was held at refrigeration temperatures prior to freezing in order to properly date mark the food when it is thawed and held at refrigeration temperatures again. Observed collard greens dated 12-12-17 at walk in cooler. Per cook, food was prepared and frozen on 12-12-17 and was recently tased for used. Advised cook to assess cook, freeze and thaw date and discard one thawed for at least seven days. **Corrected On-Site** **Warning**
