A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Ceiling/ceiling tile shows damage or is in disrepair. Water Damaged ceiling tile in kitchen. Ceiling tile is bowed and falling out in kitchen area.
Basic - Nonfood-contact equipment in poor repair. 2 deli style reach in coolers not working in kitchen. Reach in fepreezer in rear prep area not working.
High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit.10:25am cut tomato (46°F - Cold Holding); cut lettuce (48°F - Cold Holding); sprouts (60°F - Cold Holding) in reach in deli style cooler in kitchen. Operator moved items to walk in cooler for quick chill. Re temped at 10:45am cut tomato (44°F - Cold Holding); cut lettuce (45°F - Cold Holding); sprouts (55°F - Cold Holding).
High Priority - Rodent activity present as evidenced by rodent droppings found. 4 soft rodent droppings and 21 hard rodent droppings in cabinet under soda fountain, 4 dry rodent droppings in bottom of sugar packet case, 3 rodent droppings on floor behind soda fountain cabinet inspector unable to reach. Too many to count rodent droppings on floor under built in cabinet, inspector unable to reach to determine if soft or hard. Box of sugar packets has 8 chewed open packets inside. 24 chewed open sugar packets behind box of sugar. 3 chewed open packets of sugar visible on floor. Box of sugar has gnaw marks around hole in box and hole in bottom of box.
Intermediate - Accumulation of black/green mold-like substance in the interior of the ice machine. Black moldlike debris on interior of ice machine. **Repeat Violation**
Intermediate - Reach-in cooler not maintained in good repair. Do not store potentially hazardous (time/temperature control for safety) food in this unit until the unit is repaired. Reach in cooler on prep line not keeping food cold. Operator over food tomwalk in cooler. **Corrective Action Taken**
